Zoodles with Shaved Parmigiano Reggiano

Zucchini is so versatile. You can enjoy it raw, roasted, steamed, pan fried and even as a base instead of pasta. Zucchini noodles, aka zoodles, are an awesome alternative to pasta. You can buy them already spiraled in the frozen or produce section of your grocery store.

If you want to use fresh zucchini, you have some options to make it into noodle shapes. You can purchase a spiralizer gadget or skip that and make them yourself. Use a vegetable peeler (cucumber peeler) and go lengthwise to make ribbons. Then stack them on a cutting board and cut the ribbons into noodles. You can use a stainless cheese grater and slide the zucchini down lengthwise. Or use a mandolin set to an 1/8 inch thick with the julienne blade face up.
